Klits 1/4 van 500 g margarine saam met ¼ k suiker
Voeg 1 eier by, asook
1 ¼ k koekmeel, 1 t bakpoeier, sout.
Vulsel (2 terte)
1 liter melk
¼ van 500 g margarine
1 k suiker
3 E maizena
3 E koekmeel
3 groot eiers
( E - 25 ml)

Kook melk, margarien en suiker saam. Maak intussen pasta van meel, maizena, eiers. Voeg by sodra melk begin kook. Klits beslag tot glad indien dit klontjies vorm. Gooi in korse, strooi pypkaneel bo-oor.
Lamingtons - Ystervarkies
Ingredients

4 large eggs

1½ cups sugar

1 cup butter
-
3 cups flour
-
pinch of salt
-
3 t baking powder
-
1 cup milk
-
2 t vanilla essence
Icing
-
500 ml icing sugar
-
60 ml cocoa
-
60 ml soft butter or margarine
-
200 ml warm water
-
200 ml desiccated coconut
Method
1. Beat the eggs and sugar until light. Melt the butter and add to the sugar mixture. Beat well. Sift together the flour, salt and baking powder.
2. Stir in the milk and vanilla essence until the mixture is soft and drips from the spoon. Pour the batter into a large square cake tin and bake in a hot oven at 200°C for 30 minutes.
3. When cold, cut into fingers or small squares.
4. To make the icing, mix the icing sugar, cocoa and butter. Add enough water to form a thin sauce. Dip the squares into the icing and roll in the coconut.
Cook's note: I have on the odd occasion when making this seen that 30 min is not enough. Mine baked for almost an hour. Just test after 30min regularly to check if the sponge cake is ready.
